Mix diced cooked turkey, half a stalk of chopped celery, a tablespoon of dried cranberries, a tablespoon of slivered almonds, mayo to moisten, season with pepper, and put between two slices of your favorite bread. Sourdough? Whole wheat? Leftover dinner rolls? Yum! Make it even better by slipping in a slice of Swiss cheese and grilling it until the cheese melts--either in a pan or open-faced under the broiler. We still have a bit of ham (sandwiches this week), half a pumpkin pie, and half a cherry pie. Everything else is now gone, finished off at dinner tonight. RitaR Posted December 1, 2014 Report Share Posted December 1, 2014 I make a turkey sandwich by mixing some cranberry sauce or jell into some cream cheese, add turkey and lettuce on choice of bread and you've a taste treat! We got this idea from Miss Lacy's our local tea house! Shes a wonderful cook. We eat left overs all weekend, then Pitch the carcas into a soup pot. When it is fall off the bone cooked, bone, return stock and turkey to pot and do it up with other left overs, smashed taters, gravy, vegies, etc.. There are a few things I don't add, and that is anything sweet, not normally used in stews or soups, like cucumbers glazed carrots or sweet taters, and there are never olives left over to throw in.
