quiltmonkey Posted January 13, 2010 Report Share Posted January 13, 2010 Shana’s Easy Halibut The captain of a fishing charter in Homer made this dish for us one day while we were out fishing in Kachemak Bay near beautiful, breathaking Homer, Alaska. (PS: The captain and crew were hung over from partying the night before, so the captain cooked this up in the galley and shared it with us. We slayed the fish and got our limit!!!) :cool: Fun memories.... Simple, quick and good! 1 pound fresh halibut fillet ¼ cup butter ½ onion ¼ cup prepared Italian dressing Prepared white rice Melt butter in skillet until bubbly, add onion and sauté for a few minutes. Add halibut. While cooking halibut, continue to toss and break up the fish into smaller pieces in the pan. Near end of cooking time, add Italian dressing mixture and continue to stir until halibut is cooked for a few more minutes. Pour it over hot rice. . Shana..Usually my first stop when I land in Anchorage is to go to the Glacier Brew House for some Halibut Fish & Chips and one (make that several) of their delicious ales. Primitive1 Posted July 5, 2012 Report Share Posted July 5, 2012 Thanks for the recipe - I have about 3 killer halibut recipes and the thing I am so jealous about is that my middle dtr is currently up in Ktn for her 10 yr class reunion and they went fishing on Monday and caught 5 halibut!!!
