PattyJo Posted January 11, 2011 Report Share Posted January 11, 2011 I made this for the gals at the Moxie meeting and several have asked for the recipe, so here goes (got it from a site online, but can't remember which one) CORNMEAL CHICKEN POT PIE 2 Cups diced cooked chicken (I used tenderloins) 1 Can Cream of Chicken Soup with no added liquid 1 Can whole kernel corn, drained Mix these 3 items together and put into a greased 9" pie pan 1 pkg Jiffy Corn Muffin Mix prepared as directed on the package Pour over the chicken mixture in pie pan and spread to edges. Bake for 30 min in 400 degree oven or until cornbread is golden brown. sprinkle 1/2 C grated Cheese over the top of the baked pot pie when it comes out of the oven, and when the cheese melts, it's ready to eat. yankiequilter Posted January 12, 2011 Report Share Posted January 12, 2011 I fixed this for dinner tonight and both DH and I thought it was yummy. I used turkey and added a can of mushrooms. Oh well I got creative and made a cornmeal topping from scratch, got a little too much, next time will be better, but was still reallllllly good. My DH and DS's loved it! My son's asked if I would copy it and put it in there binders. I put recipes that my boys like in binders...so if they EVER move out they will have them.
