lisae Posted December 17, 2012 Report Share Posted December 17, 2012 Pork Green Chile Stew 4 lb pork roast, cut into 1” cubes 1 large onion, chopped 2 cans green chiles 2 cans diced tomatoes (I used Ro-Tel, but any brand will work) 3 lbs red potatoes, cubed (I leave the skins on) 32 oz chicken or beef broth Salt & pepper to taste Layer potatoes, onions and pork in crock pot. Add green chiles and tomatoes. Pour broth over top. Cook in slow cooker 10 hours on low or 6 hours on high. Adjust seasonings and enjoy! Most importantly, go quilt while the stew is cooking!
