Strawberry Muffins

This recipe took first place in the Strawberry bake-off in CA many years ago. It one of my favorite muffin recipes. It works well with blueberries too.

Strawberry Muffins

2 C flour

3/4 C sugar

2 tsp baking powder

1 tsp salt

3 eggs

1/2 C milk

1/4 C oil

1 tsp grated orange rind ( I don\'t use this ingredient)

1 C chopped fresh strawberrries (I like to use 2 cups)

1 Tbsp sugar

Strawberry Spread

1 (8 oz) package cream cheese

1/4 C crushed or chopped strawberries

Preheat oven to 400 degrees.

For muffins: Place berries in a bowl. Sprinkle berries with 1 Tbsp sugar and let stand. In large bowl, sift together dry ingredients. In small bowl, beat eggs lightly. Add oil, milk and orange rind. Beat until well blended. Add egg mixture to flour. Stir until mixed, 10 to 15 strokes. Drain berries and fold into batter. Fill paper lined muffin cups 2/3 full. Bake at 400 degrees for 15 minutes or until tester comes clean. Serve with strawberry cream cheese spread.

For spread: soften cream cheese to room temp. Blend in berries.

These muffins freeze well. I usually make a double batch.

I have blueberries in my freezer. Yum.

Bonnie, let's see who can lose 5 pounds first! Wanna start? Ooooo do I need to get off this computer. I'm stressed with two quilts overdue, grandkids coming for the weekend, and taxes! AAAArrrrghhh
