Since this is the first week of Lent, I thought I'd post a really good fish recipe I hope you will enjoy. Oven Baked “Fish on Friday” Combine 2 tablespoons of butter with 1/2 cup of minced onion in a casserole dish. Place 1 1/2 lbs. of cod fish fillet pieces over the butter and onions, season with salt, pepper, 2-3 tablespoons lemon juice and a pinch of red or hot chili pepper flakes (optional). Cut 4-5 slices of bread into cubes (about 2 cups). Mix the bread cubes together in a separate bowl with 1 cup of fat-free sour cream and 1/2 cup of mayonnaise. Spread this mixture over the fish. Sprinkle with paprika. Bake uncovered for 35-45 minutes in a 375* F oven. Leslie
