Pippa's Carrot Cake (Home and Away -ages ago)

For all those who watched the Original Home and Away. Yeah we are similar vintage. This was Pippa's recipe for her Carrot Cake. Haven't made one for ages so I might have to cook one this week too.

1 cup SR flour

1 tspn bicarb soda

1/2 tspn ground cinnamon

1/2tspn ground cloves

1cup firmly packed brown sugar

1 1/2cups grated carrot

1/2 cup sultanas(raisins in US)

1/2 tspn dground ginger or could use 1/2 cup gacled chooped ginger

1/2 cp chopped walnuts

2/3 cup vegetable oil

2eggs, lightly beaten

sift dry ingredients, stir in everything else except for oil and eggs. Then beat in oil and eggs for 5 minutes. Pour into prepared loaf pan, bake in moderatley slow oven for an hour. Stand for 5 minutes then turn onto wire rack to cool.

Spread with Frosting

60g or 2 oz cream cheese

1 tspn grated lemon rind

30g or 1oz soft butter

1 1/2 cups icing sugar

Beat butter crean cheese and rind, beat in sifted icing sugar.

Oh yum! This sounds great. No doubt it would put me in a sugar coma, but it might be worth it. ;)

When we were on vacation in Alaska I saw a cookbook for using cannabis. I found Alaska interesting; when I shooed my husband out of the quilt shop, he moseyed across the street to discover a cannabis store.  Toto, we were not in Kansas anymore. :lol:
