I will share my experience making my first (small) Lone Star Quilt (Blanche Young Class) where all sections of the star are on the bias. Perhaps this technique would transfer to quilting fleece and other stretchy fabrics.

As soon as one large diamond wedge of the star was sewn together, I laid it flat on the table and cut a piece of newspaper the exact measurement the wedge should be which ideally was also the exact measurement of the wedge piece just sewn. I basted the newspaper to the wrong side of the wedge, after which I was able to handle the wedge sections with abandon and never had to worry about stretching anything out of place. After the seams joining wedges were sewn, I removed the newspaper (tweezers necessary). All wedges went together perfectly and the quilt lay perfectly flat. I shudder to think how it would have stretched out of shape had I not done the newspaper trick.
