Split Second Cookies

I always forget about these cookies and totally enjoy them when I make them. There are few ingredients so they go together quickly. They are from the 1954 Pillsbury Bake-off and are sort of like a shortbread.

Split Seconds

3/4 C margarine or butter, softened

2/3 C sugar

2 tsp vanilla

1 egg

2C all purpose flour

1/2 tsp baking powder

1/2 C raspberry jam or preserves

Heat oven to 350 degrees. In large bowl, beat margarine and sugar until light and fluffy. Add vanilla and egg; blend well. Stir in flour and baking powder; mix well. Divide dough into 4 equal parts. On a lightly floured surface, shape each part into a 12 x 3/4 inch roll; place on ungreased cookie sheet. Using handle of wooden spoon or finger, make a depression about 1/2 inches wide and 1/4 inch deep lengthwise down the center of each roll. Fill each roll with 2 tablespoons jam.

Bake at 350 degrees for 15 to 20 minutes or until light golden brown. Cool slightly; cut diagonally into strips. Cool completely on wire racks.

Yield 4 dozen cookies
