I just read those recipes to Margie on her way home from open house at school and she said she's going back to the store for oil to make some beignets tonight. I can't wait! I do have a great recipe for pralines, but it's my grandma's and I'll have to search for it. I love melting sugar! Speaking of that, I have a recipe for burnt sugar pie that is just wonderful if anyone's interested.
