Funny how people always know what everyone else should do! If they were asked for their input before the decision was made, that would be different, but the gracious thing to do now would be to support and be happy for the prospective parents regardless of how she feels personally. ( I doubt she has any idea how it feels to lose a child. )

This is a very brave decision on the part of your son and DIL as there is still an abundance of ignorance and racism in this country. You should be very proud that you have raised a child with none of those ignorant notions. Don't let her remarks hurt you. She is the one who should be ashamed.
