Pork Green Chile Stew

Pork Green Chile Stew

4 lb pork roast, cut into 1” cubes

1 large onion, chopped

2 cans green chiles

2 cans diced tomatoes (I used Ro-Tel, but any brand will work)

3 lbs red potatoes, cubed (I leave the skins on)

32 oz chicken or beef broth

Salt & pepper to taste

Layer potatoes, onions and pork in crock pot. Add green chiles and tomatoes. Pour broth over top. Cook in slow cooker 10 hours on low or 6 hours on high. Adjust seasonings and enjoy!

Most importantly, go quilt while the stew is cooking!

Thanks for sharing this recipe. I made it 2 days ago. I cut the recipe in half, in case we didn't like it, hubby doesn't like spicy, but it was really good. :) Definitely a keeper!
