This was Pippa's recipe for her Carrot Cake. Haven't made one for ages so I might have to cook one this week too. 1 cup SR flour 1 tspn bicarb soda 1/2 tspn ground cinnamon 1/2tspn ground cloves 1cup firmly packed brown sugar 1 1/2cups grated carrot 1/2 cup sultanas(raisins in US) 1/2 tspn dground ginger or could use 1/2 cup gacled chooped ginger 1/2 cp chopped walnuts 2/3 cup vegetable oil 2eggs, lightly beaten sift dry ingredients, stir in everything else except for oil and eggs. Then beat in oil and eggs for 5 minutes. Pour into prepared loaf pan, bake in moderatley slow oven for an hour. Stand for 5 minutes then turn onto wire rack to cool. Spread with Frosting 60g or 2 oz cream cheese 1 tspn grated lemon rind 30g or 1oz soft butter 1 1/2 cups icing sugar Beat butter crean cheese and rind, beat in sifted icing sugar. I found Alaska interesting; when I shooed my husband out of the quilt shop, he moseyed across the street to discover a cannabis store. Toto, we were not in Kansas anymore.
