Cornmeal Chicken Pot Pie

I made this for the gals at the Moxie meeting and several have asked for the recipe, so here goes (got it from a site online, but can't remember which one)


2 Cups diced cooked chicken (I used tenderloins)

1 Can Cream of Chicken Soup with no added liquid

1 Can whole kernel corn, drained

Mix these 3 items together and put into a greased 9" pie pan

1 pkg Jiffy Corn Muffin Mix prepared as directed on the package

Pour over the chicken mixture in pie pan and spread to edges.

Bake for 30 min in 400 degree oven or until cornbread is golden brown.

sprinkle 1/2 C grated Cheese over the top of the baked pot pie when it comes out of the oven, and when the cheese melts, it's ready to eat.

Quick, Easy and pretty darn good too!
